Ingredients
- 5 tablespoons of water
- 2 tablespoons chia seeds
- 200 g salted butter (room temperature)
- 270 g sugar
- 150 ml oat milk
- 2 teaspoons baking powder
- 270 g flour
- 3 teaspoons cinnamon
- 1.5 tsp ginger, ground
- 1.5 tsp cloves, ground
- 60 g cranberries

preparation
- Mix water and chia seeds in a glass and let it swell.
- Preheat the oven to 175°C.
- Grease a baking pan with butter and sprinkle with flour.
- Assemble the Ankarsrum using the mixing bowl and whisk.
- Mix the chia mixture with butter, sugar and oat milk.
- Mix the dry ingredients and add them to the dough.
- Add the cranberries and pour the dough into the baking pan.
- Bake in the oven for about 25 minutes.
- Let the cake rest a little before turning it out.
- Sprinkle with powdered sugar before serving.
