Ingredients
  • 5 tablespoons of water
  • 2 tablespoons chia seeds
  • 200 g salted butter (room temperature)
  • 270 g sugar
  • 150 ml oat milk
  • 2 teaspoons baking powder
  • 270 g flour
  • 3 teaspoons cinnamon
  • 1.5 tsp ginger, ground
  • 1.5 tsp cloves, ground
  • 60 g cranberries

preparation
  1. Mix water and chia seeds in a glass and let it swell.
  2. Preheat the oven to 175°C.
  3. Grease a baking pan with butter and sprinkle with flour.
  4. Assemble the Ankarsrum using the mixing bowl and whisk.
  5. Mix the chia mixture with butter, sugar and oat milk.
  6. Mix the dry ingredients and add them to the dough.
  7. Add the cranberries and pour the dough into the baking pan.
  8. Bake in the oven for about 25 minutes.
  9. Let the cake rest a little before turning it out.
  10. Sprinkle with powdered sugar before serving.
